Devil’S Food (Cup)Cake Sandwiches
- 1/2 cups Boiling Water
- 2/3 cups Cocoa Powder
- 1/4 cups Milk
- 2 teaspoons Vanilla Extract
- 1/2 cups Butter
- 2/3 cups Brown Sugar
- 2 whole Eggs
- 1 cup Whole Wheat Pastry Flour
- 1/2 teaspoons Baking Soda
- 1 teaspoon Espresso Powder
- 1/2 teaspoons Salt
- 16 ounces, weight Container Of Frosting (or You Can Make Your Own)
- 1 Tablespoon Dark Chocolate Chips
- 1. Preheat oven to 350u0b0F and grease two 12 count muffin tins.
- 2. Mix boiling water and cocoa powder into a paste.
- 3. Add milk and vanilla to the cocoa paste and mix until smooth. Set aside.
- 4. In another bowl beat the butter and sugar until creamy.
- 5. Add eggs.
- 6. Add cocoa paste mixture to the creamed mixture and mix to combine.
- 7. Mix in the dry ingredients (flour, baking soda, espresso powder, and salt).
- 8. Pour into the prepped muffin tins.
- 9. Bake for 25 minutes. You want the cake to start pulling away from the sides.
- 10. Let cool completely before frosting.
- 11. Then top the frosting with chocolate chips.
