Pork And Cumin
- 2 lb. pork shoulder, boneless and cut into 1-inch cubes
- 1/4 c. flour
- 1/2 c. oil
- 1 medium onion, chopped (about 1/2 c.)
- 2 slices bacon
- 1/2 c. water
- 4 tomatoes, chopped
- 2 medium potatoes, diced
- 2 Tbsp. orange juice
- 1 Tbsp. lemon juice
- 2 tsp. instant chicken bouillon
- 2 tsp. cumin
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. sour cream (optional)
- Coat
- pork
- with
- flour.
- Heattil
- in 10-inch skillet until hot.
- Cooktnd
- stir pork over medium heat until brown. Drain. Cook
- and
- stir
- onion and bacon in same skillet until bacon
- is crisp.
- Stir
- in
- pork
- and
- remaining ingredients, excepttour cream.
- Heat to boiling.
- Reduce heat.
- Cover and simmer until pork
- is tender, about 45 minutes.ttir in sour cream, if desired, and heat until hot.
- Makes 7 servings.
