Peanut Butter Blondies With Chocolate Frosting
- FOR THE BROWNIES:
- 1/2 cups Natural Smooth Peanut Butter
- 1/3 cups Butter, Softened
- 2/3 cups Sugar
- 1/2 cups Brown Sugar, Packed
- 1 whole Egg
- 1 whole Egg White
- 1 teaspoon Vanilla
- 1/2 cups All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1 teaspoon Baking Powder
- 1/4 teaspoons Sea Salt
- 1/2 cups Peanut Butter Chips
- FOR THE FROSTING:
- 1/2 cups Chocolate Chips, Melted
- 1/3 cups Butter, Melted
- 1/4 cups Powdered Sugar
- To make brownies: Preheat oven to 350 degrees F.
- In a bowl, cream together peanut butter and softened butter. Gradually blend in sugars, eggs, and vanilla and beat until fluffy, about 2-3 minutes. Add flours, baking powder, and salt and combine. Fold in peanut butter chips. Pour into a greased 9x9 baking dish. Bake for 32-35 minutes, or until just barely done. Cool before frosting.
- To frost: Melt 1/2 cup dark chocolate chips in microwave on 20-second intervals (stir in between each interval, and make sure to stop once it's melted). Then add in butter and microwave for 30 seconds. Add in the powdered sugar and stir together until a thick glaze forms. Pour onto cooled blondies and spread frosting evenly. Refrigerate for 30 minutes or so - that is, if you can wait.
