Oatmeal Carrot Cookies
- 3/4 c. margarine
- 3/4 c. brown sugar, packed
- 1/4 c. white sugar
- 1 c. shredded carrots
- 1 tsp. vanilla
- 3/4 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 egg
- 1/4 tsp. ground cloves
- 2 c. oatmeal
- 1/2 c. raisins
- vegetable cooking spray
- In large bowl, cream together margarine, brown sugar and white sugar; blend in egg.
- Add carrots and vanilla; mix well.
- In a separate bowl, combine dry ingredients (flour, baking powder, soda, cinnamon and cloves).
- Add flour mixture, alternating with oatmeal to cream mixture.
- Mix until well blended.
- Stir in raisins.
- Drop dough by teaspoon on cookie sheet coated with vegetable spray.
- Bake at 350u0b0 for 8 to 10 minutes.
- Cool on wire rack.
