Turkey Scallopini

  1. Place cutlets between unwaxed paper.
  2. Flatten to 1/8 inch thickness.
  3. Combine pepper, cheese and bread crumbs; dredge cutlets in mixture.
  4. Coat a nonstick skillet with cooking spray.
  5. Add olive oil.
  6. Place over medium-high heat until hot.
  7. Add cutlets; cook 2 minutes on each side or until browned.
  8. Add wine and lemon juice; cook 2 minutes or until heated.
  9. Transfer to serving platter; sprinkle with parsley.
