Asian Pork Salad
- FOR THE MARINADE:
- 1/4 cups Soy Sauce
- 1 Tablespoon Sesame Oil
- 1 clove Garlic, Minced
- 1 piece (1-Inch Long) Ginger, Minced
- 1/8 teaspoons Pepper
- 3/4 cups Orange Juice
- 1 pound Pork Cutlets

- FOR THE DRESSING:
- 1/4 cups Orange Juice
- 1/4 cups Soy Sauce
- 1/2 teaspoons Powdered Ginger
- 1 Tablespoon Sesame Oil
- 1 Tablespoon Vinegar

- FOR THE SALAD:
- 1 head Lettuce
- 8 ounces, weight Cooked Edamame
- 12 ounces, weight Mandarin Oranges
- 4 ounces, weight Snow Peas
- 1 whole Carrot, Shaved
- 1 cup Broccoli, Cut Into Small Pieces
- 1 whole Red Pepper, Sliced
- 1-1/2 cup Chow Mein Noodles
- For the marinade, mix together all the ingredients with the exception of the pork.
- Slice the pork into 1" strips and mix into the marinade, coating completely. Cover and place in the fridge for 1 to 2 hours.
- After marinating, cook up in a preheated wok set to medium high heat for 4 to 5 minutes or until cooked through.
- For the dressing, mix together all the dressing ingredients.
- To assemble the salad, plate the greens with desired toppings, including pork, edamame, mandarin oranges, snow peas, carrots, broccoli, red pepper, and chow mein noodles.
- Pour dressing over the top of the salad and serve.
