Grandma Violet’S Cranberry Citrus Snack Bread
- 4 cups Flour
- 2 cups Sugar
- 3 teaspoons Baking Powder
- 2 teaspoons Salt
- 1 teaspoon Baking Soda
- 1/2 cups Shortening
- 2 teaspoons Orange Zest
- 1-1/2 cup Orange Juice
- 2 Eggs, Beaten
- 2 cups Fresh Cranberries, Chopped
- 1 cup Chopped Walnuts
- Preheat the oven to 350u0b0F. Grease 2 loaf pans (9 x 5 x 3 inch pans).
- Sift the flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in the shortening.
- In a separate container, mix the orange zest, juice, and beaten eggs. Add to the dry ingredients.
- Fold in the berries and nuts.
- Turn into the greased loaf pans. Bake 1 hour. Cool in pan.
- When cool, cover in plastic wrap and let sit overnight.
