Peanut Butter Cookie Dough Brownies
- FOR THE BROWNIES:
- 2 ounces, weight Unsweetened Chocolate, Melted
- 1/3 cups Canola Oil
- 2 whole Eggs
- 1 cup Sugar
- 3/4 cups Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- FOR THE FILLING:
- 1/4 cups Butter, Softened
- 1/2 cups Brown Sugar
- 1/2 cups Peanut Butter
- 1 teaspoon Vanilla
- 2 Tablespoons Milk
- 3/4 cups Flour
- 1/4 teaspoons Salt
- FOR THE CHOCOLATE LAYER:
- 1 cup Chocolate, Melted
- 2 teaspoons Shortening
- FOR THE TOPPING:
- 1/2 cups Powdered Sugar
- 1 Tablespoon Milk
- 1/4 teaspoons Vanilla
- 2 Tablespoons Peanut Butter
- Preheat oven to 350u0b0F. Prepare an 8x8 baking pan.
- To make the brownies, blend melted chocolate and the canola oil together. Mix in eggs and sugar. Stir in flour, baking powder and salt until just combined. Pour batter into the pan and bake for about 25 minutes. Allow to cool completely.
- To make the filling, cream together butter and brown sugar. Mix in peanut butter, vanilla and milk. Stir in flour and salt until well combined. Spread over cooled brownies. It may be sticky. You can spray a spatula with nonstick spray or slightly dampen your hands to spread it out.
- For the chocolate layer, stir together melted chocolate and shortening. Pouur over the peanut butter layer. Put in the fridge for 30 minutes to start to harden.
- For the topping, stir together the powdered sugar, milk, vanilla and peanut butter. Adjust the amount of milk to get your desired consistency. Drizzle over chocolate layer. Store in the fridge. Enjoy!
