Best Ever Oatmeal Raisin Cookies
- 1 cup Raisins, Soaked In Hot Water And Drained
- 1-1/4 cup Flour
- 1 teaspoon Baking Soda
- 1 pinch Salt
- 1 cup Butter, Softened
- 1 cup Brown Sugar
- 1 teaspoon Vanilla
- 1 package Instant Vanilla Pudding Mix, 153 Gram Size
- 2 whole Eggs
- 1 cup Oatmeal
- 1 cup Coconut, Shredded And Sweetened
- 2 cups Cornflakes
- Preheat oven to 360 F.
- Soak raisins in 1 cup hot water for 15 minutes to plump them up and then drain.
- In a small bowl, whisk together flour, soda and salt and set aside.
- In the bowl of a standup mixer with a paddle attachment, cream butter and brown sugar. Add vanilla and pudding mix and mix to combine. Beat in eggs. Slowly add the flour mixture while continuing to mix.
- Remove dough to a larger bowl and add raisins, oats, coconut and cornflakes. Start to mix everything in with a wooden spoon. At the end I lightly mix with my hands to make sure all the ingredients are incorporated well.
- Drop by tablespoon onto a lightly greased cookie sheet then flatten slightly. Bake for 12-16 minutes.
