Best Ever Oatmeal Raisin Cookies

  1. Preheat oven to 360 F.
  2. Soak raisins in 1 cup hot water for 15 minutes to plump them up and then drain.
  3. In a small bowl, whisk together flour, soda and salt and set aside.
  4. In the bowl of a standup mixer with a paddle attachment, cream butter and brown sugar. Add vanilla and pudding mix and mix to combine. Beat in eggs. Slowly add the flour mixture while continuing to mix.
  5. Remove dough to a larger bowl and add raisins, oats, coconut and cornflakes. Start to mix everything in with a wooden spoon. At the end I lightly mix with my hands to make sure all the ingredients are incorporated well.
  6. Drop by tablespoon onto a lightly greased cookie sheet then flatten slightly. Bake for 12-16 minutes.
