Critter'S Chocolate Mousse
- 5 lb. bittersweet chocolate, melted
- 3/4 c. butter, melted
- 1 c. egg yolks
- 1 1/2 Tbsp. instant coffee
- 1/2 c. cherry brandy or Bailey's Irish Cream
- 1 c. egg whites
- pinch of salt
- 1/2 c. powdered sugar
- 1 1/2 pt. whipping cream
- First melt the chocolate.
- In a bowl mix the butter, egg yolks and instant coffee.
- In another bowl, mix cherry brandy or Bailey's Irish Cream, egg whites, salt and powdered sugar.
- Mix the second bowl into the first bowl, then fold into the melted chocolate.
- In a cold metal bowl, beat the whipping cream until thick.
- Mix the whipping cream into the chocolate.
- Place mixture into a cake tin. Chill for a day before serving.
- Yields 2 cakes.
