Apple, Nut & Cheese Salad With Apple Vinaigrette
- FOR THE SALAD:
- 2 bunches Mixed Greens
- 1 whole Granny Smith Or Fuji Apple, Sliced
- 1/2 cups Pecans, Walnuts Or Almonds, Toasted
- 2 ounces, weight Cheddar Cheese, Small Cubed
- 1/2 whole Red Onion, Thinly Sliced
- 1 cup Grape Tomatoes

- FOR THE APPLE VINAIGRETTE:
- 1 teaspoon Dijon Mustard
- 1/4 cups Extra Virgin Olive Oil
- 1/4 cups Apple Cider Vinegar
- 2 Tablespoons Apple Juice
- 1 teaspoon Minced Shallot Or Sweet Onion
- 1 teaspoon Minced Apple
- 1 pinch Salt
- 1 pinch Fresh Ground Peppar
- For the salad:
- In a bowl or plate, arrange greens, apples, nuts, cheese, onion and tomatoes and serve with desired amount of apple vinaigrette (see below).
- For the apple vinaigrette:
- Combine dijon, oil, vinegar, apple juice, onion, apple, salt and pepper in a jar or container and shake well. Adjust to taste (I don't like a lot of oil in my dressings, you may want to add more to your liking).
