Turkey Enchilada

  1. Saute onion and mushrooms 5 to 8 minutes.
  2. Add turkey and brown.
  3. Add chicken stock and reduce liquid by half, stirring frequently.
  4. Add garlic, tomato, tomato sauce and hot sauce.
  5. Cook on low heat 3 to 5 minutes.
  6. Add 1/4 of cheese mixture; stir in and let cool.
  7. Lightly brown tortillas.
  8. Dollop mixture in and add salsa to taste.
  9. Roll tortillas; put in 9 x 13-inch pan.
  10. Cover with remaining cheese mixture.
  11. Put in oven at 400u0b0 until cheese melts and browns, approximately 15 to 20 minutes.
  12. Serve with salsa.
