Turkey Enchilada
- 1 lb. ground turkey
- 1 medium yellow onion, chopped
- mushrooms (optional)
- 1 can chicken stock
- 1 can Hunt's chunky Mexican style sauce
- 1 tomato, de-seeded and roughly chopped
- 3 cloves garlic, finely chopped
- 1 tsp. hot pepper sauce or salsa or both
- 1 c. grated Mozzarella
- 1 c. grated Cheddar
- 1 pkg. large flour tortillas
- Saute onion and mushrooms 5 to 8 minutes.
- Add turkey and brown.
- Add chicken stock and reduce liquid by half, stirring frequently.
- Add garlic, tomato, tomato sauce and hot sauce.
- Cook on low heat 3 to 5 minutes.
- Add 1/4 of cheese mixture; stir in and let cool.
- Lightly brown tortillas.
- Dollop mixture in and add salsa to taste.
- Roll tortillas; put in 9 x 13-inch pan.
- Cover with remaining cheese mixture.
- Put in oven at 400u0b0 until cheese melts and browns, approximately 15 to 20 minutes.
- Serve with salsa.
