Chicken Lemon Soup With Orzo Pasta – Crockpot
- 8 ounces, weight Boneless Skinless Chicken Breast
- 2 whole Carrots, Diced
- 2/3 cups Celery, Diced
- 2/3 cups Onion, Diced
- 1/2 Tablespoons Pepper, Ground
- 2 teaspoons Rosemery
- 2 teaspoons Thyme
- 1/4 cups Lemon Juice
- 4 cups Chicken Broth, Low-Sodium
- 2 cups Water
- 1 bunch Spinach, Fresh, Stems Removed
- 1/2 cups Orzo Pasta
- Add all of your ingredients into a crockpot (except the orzo pasta and spinach). Cook on low for 7-9 hours or on high for 5-6 hours.
- About an hour before the cook time is done, remove the chicken from the pot and shred chicken with a fork. Add it back into the soup.
- Meanwhile, cook your orzo pasta according to package directions.
- About 5 minutes before you serve your soup, add spinach and orzo pasta. Put the lid on the crockpot and continue to cook. Wait for the spinach to wilt.
- Top soup with a little Parmesan cheese when you serve it.
