Red Cabbage
- 1 head red cabbage (about 3 lb.)
- 2 Tbsp. sugar
- 3 Tbsp. butter or margarine
- wine vinegar
- salt and pepper
- 1 chopped apple (tart, like Granny Smith; optional)
- 1 tsp. caraway seed (optional)
- Trim cabbage and chop or shred.
- Wash well and drain.
- Melt butter in large pot and add sugar.
- Fry until golden brown. Quickly throw in cabbage (stand back because it may splatter a little).
- Toss cabbage.
- Add 2 tablespoons vinegar, caraway seed, apple, salt and pepper to taste and just enough water to prevent burning.
- Simmer slowly, adding a little more water if necessary. Adjust seasonings; cabbage should have a sweet-sour flavor; add more sugar and/or vinegar to suit.
- Simmer for approximately 30 to 40 minutes to allow flavors to blend.
- This dish improves greatly with each reheating.
