Peanut Butter Protein Cupcakes
- 1/2 cups Coconut Flour
- 1/3 cups Peanut Flour
- 1/4 cups Chocolate Protein Powder
- 1/3 teaspoons Sea Salt
- 1/2 teaspoons Baking Powder
- 5 whole Large Eggs
- 1/3 cups Coconut Oil
- 1/2 cups Honey
- 1 teaspoon Vanilla Extract
- Preheat oven to 350u0b0F. Line muffin tin with 9 cupcake liners or spray with cooking spray.
- In a large bowl, whisk together coconut flour, peanut flour, protein powder, salt, and baking powder.
- Crack eggs into dry ingredients one at a time. Add in coconut oil, honey, and vanilla extract and mix with an electric mixer (this ensures there are no clumps in the batter).
- Scoop 1/4 cup of batter into each cupcake liner.
- Bake at 350u0b0F for 20-25 minutes, until an inserted toothpick comes out clean.
