Asian Dumpling Soup
- 1 Tablespoon Olive Oil
- 1/2 whole Medium Onion, Chopped
- 2 whole Carrots, Sliced Or Cut Into Matchsticks
- 1-1/2 quart Chicken Stock Or Broth
- 1 piece Fresh Ginger, Minced (about The Size Of Your Thumb)
- 1 package Frozen Wontons Or Potstickers (15 Count)
- 4 ounces, weight Mushrooms, Sliced
- 1 Tablespoon Low Sodium Soy Sauce
- Salt And Pepper, to taste
- 4 whole Scallions, Sliced
- Saute onions and carrots in 1 tablespoon oil over medium heat until onions become translucent. Add chicken stock and ginger and bring to a boil. Simmer for a few minutes, then add frozen wontons/potstickers. Simmer until wontons are cooked through, about 5 to 7 minutes. Add mushrooms, soy sauce, and salt/peper to taste. Simmer for another 2 to 3 minutes. Sprinkle fresh scallions on top of individual servings.
- Change up the flavour by changing out the wontons/potstickers for different varieties!
