Peanut Butter S’Mores Bars

  1. Preheat oven to 350F. Grease an 8x8 or 9x9 pan and set aside.
  2. Whisk together the flour, salt, baking powder, baking soda and cinnamon in a medium bowl. Set aside.
  3. In a bowl fit for a stand mixer, mix butter and sugars until smooth. Add the eggs, one at a time, mixing well after each addition. Add vanilla and peanut butter and mix to incorporate.
  4. Add the dry ingredients in three installments, beating just until incorporated after each addition. Scrape down the sides of the bowl as needed.
  5. Spread half of the peanut butter mixture evenly into the prepared pan. Layer the graham crackers evenly on top, then the Hershey's bars. The Hershey's bars should be evenly spaced out. Using an ice cream scoop or a large spoon, spoon the other half of the peanut butter mixture evenly on top of the graham crackers and chocolate. Use a spatula or knife to spread the globs out a bit. There should be spaces between the scoops.
  6. Bake for about 25-30 minutes, then add the marshmallows and cook for another 10 minutes, or until the marshmallows are golden brown and the bars are cooked through. If the marshmallows are browning and the bars are still too gooey, cover with foil and cook until the bars are finished.
  7. Cut into squares so that each piece has a marshmallow!
