Decadent Cheesecake Stuffed Strawberries With Chocolate
- 1 pound Fresh Strawberries
- 8 ounces, weight Cream Cheese, Room Temperature
- 1/2 cups Powdered Sugar
- 1 teaspoon Vanilla Extract
- 4 whole Nilla Wafer Cookies, Crushed
- 1 cup Semi-Sweet Chocolate Chips
- 1. Cut a straight line across the top of each strawberry (removing stem), so berries stand upright. Place strawberries cut side down and make a criss cross cut on the bottom of each strawberry. Cut no more than 3/4 of the way down, making sure you do not cut all the way through. Gently fan out wedges.
- 2. In a medium-sized bowl, mix together cream cheese, powdered sugar and vanilla extract, until creamy and smooth. Fill mixture into a pastry bag or Ziploc bag. Cut a small slit on one end of the bag.
- 3. Gently fill each strawberry with the cream cheese mixture. Sprinkle crushed Nilla wafer cookies on top.
- 4. Microwave chocolate chips in a small bowl for about 1 minute, or until melted. Stir melted chocolate with a fork and drizzle over the top of the strawberries. You can drizzle as much or as little of the chocolate as you'd like.
- 5. Refrigerate until ready to serve, and enjoy!
- Note: these are best if served the same day.
