Chewy Ginger Molasses Cookies

  1. Preheat oven to 350u0b0F.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add in egg and molasses and beat until well-combined.
  3. In a second large bowl, sift together flour, baking soda, cinnamon, salt, and ginger. Gradually add to the wet sugar mixture and stir until combined.
  4. (I used my hand mixer until the dough became stiff and then I finished mixing by hand.)
  5. Drop by rounded tablespoons onto an ungreased baking sheet, placing cookies at least 2-inches apart. Sprinkle granulated sugar over each cookie. Bake 12-15 minutes.
  6. Remove to a wire rack and cool.
