Chewy Ginger Molasses Cookies
- 1/2 cups Butter, Room Temperature
- 3/4 cups Granulated Sugar, Plus Extra To Sprinkle On Cookies
- 1 whole Egg
- 1/2 cups Molasses
- 2 cups All-purpose Flour
- 2 teaspoons Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1/2 teaspoons Ginger
- Preheat oven to 350u0b0F.
- In a large bowl, cream butter and sugar until light and fluffy. Add in egg and molasses and beat until well-combined.
- In a second large bowl, sift together flour, baking soda, cinnamon, salt, and ginger. Gradually add to the wet sugar mixture and stir until combined.
- (I used my hand mixer until the dough became stiff and then I finished mixing by hand.)
- Drop by rounded tablespoons onto an ungreased baking sheet, placing cookies at least 2-inches apart. Sprinkle granulated sugar over each cookie. Bake 12-15 minutes.
- Remove to a wire rack and cool.
