Nectarine, Raspberry And Chicken Salad W/ Citrus Vinaigrette
- FOR THE SALAD:
- 4 cups Romaine Lettuce, Torn Into Bite Size Pieces
- 1-1/2 cup Diced Cooked Chicken (I Used Leftover Chicken, But You Could Cook 2 Boneless Skinless Breasts)
- 2 Tablespoons Thinly Sliced Red Onion
- 1 whole Nectarine, Sliced Into Wedges, Then Halved
- 1/2 cups Raspberries
- 1 stalk Celery, Diced
- 1/4 cups Chopped Or Sliced Almonds

- FOR THE DRESSING:
- 2 whole Oranges, Juiced
- 1/4 cups Olive Oil
- 1/4 cups Red Wine Vinegar
- 1 teaspoon Herbs From Your Pantry, Whatever Sounds Good To You
- 1/2 teaspoons Salt
- 1 clove Garlic, Grated
- 2 teaspoons Honey
- For the salad:
- First place lettuce in a bowl, then top with chicken, onion, nectarine, raspberries, celery and almonds. Pour vinaigrette over top and serve!
- For the dressing:
- Put all ingredients in a container that has a good sealing lid and shake the snot out of it.
