Chocolate Pie
- 1 1/2 c. sugar
- 3 heaping Tbsp. flour
- 3 Tbsp. plus 2 tsp. cocoa
- pinch of salt
- 1 c. water
- 2 slightly beaten egg yolks
- 1 small can evaporated milk
- 2 Tbsp. butter
- 1 1/2 tsp. vanilla
- 1 baked pastry shell
- meringue or whipped cream
- Mix together first 4 ingredients.
- Measure 1 cup of water and add only enough to the dry ingredients to make a paste.
- Blend into the paste, egg yolks, followed by the remainder of the water and evaporated milk.
- Cook over slow fire, stirring mixture frequently.
- Add butter during cooking process.
- When filling is thick (do not overcook), add vanilla.
- Pour into baked pastry shell and top with meringue or whipped cream.
- If topped with whipped cream, chill before serving.
