Pecan Cranberry & Avocado Salad With Orange Dressing
- FOR THE SALAD:
- 10 leaves Purple Frilly Lettuce
- 1 head (small) Gem Lettuce
- 1/2 Medium Cucumber
- 2 Oranges
- 1/2 Granny Smith Apple
- 1/2 Medium Avocado
- 1/4 cups Cranberries
- 1/4 cups Pecans
- FOR THE DRESSING:
- 1/2 Lemon, Juiced
- 1 Orange, Juiced
- 1/2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Olive Oil
- 2 teaspoons Honey
- Salt And Pepper, to taste
- Wash the lettuce leaves well then arrange on a large platter around a small bowl (which will hold the dressing).
- Slice the cucumber into small pieces, slice the oranges into segments and slice the apple and avocado into thin half moon slices. Place them all on top of the lettuce leaves then scatter over the cranberries and pecans.
- Mix dressing ingredients together and pour into the small bowl in the centre of the salad.
