Angel Hair Amatriciana
- 6 slices bacon, chopped
- 2 Tbsp. corn oil
- 2 medium onions, thinly sliced
- 1 (28 oz.) can whole tomatoes, undrained
- 2 tsp. cider vinegar
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. crushed red pepper
- 8 oz. angel hair pasta, cooked and drained
- In large skillet, cook bacon just until crisp.
- Remove bacon; drain fat from skillet.
- Add corn oil.
- Heat over medium heat.
- Add onion; saute 6 to 8 minutes or until browned.
- Stir in tomatoes with juice, breaking tomatoes with spoon.
- Add bacon, cider vinegar, sugar, salt and crushed red pepper.
- Bring to boil over medium heat.
- Reduce heat to low.
- Simmer, uncovered, 10 to 12 minutes, stirring occasionally.
- Toss with angel hair.
- Makes 4 servings.
