Broccoli, Bacon And Mandarin Orange Salad
- FOR THE SALAD:
- 2 cups Fresh Broccoli Florets (Heaping)
- 1/4 cups Chopped Red Onion
- 1/4 cups Hormel Real Bacon Bits
- 1/4 cups Whole Cashews
- 1 can (11 Oz. Size) Mandarin Oranges
- FOR THE DRESSING:
- 3 Tablespoons Mayonnaise
- 2 Tablespoons Juice From The Can Of Mandarin Oranges (or Apple Juice, Or Milk)
- 2 teaspoons Rice Vinegar
- 1 Tablespoon Sugar
- For the salad:
- In a large bowl, add the broccoli florets, chopped red onion, bacon bits, and cashews.
- Drain the can of Mandarin oranges and reserve the juice. Set the Mandarin oranges aside.
- For the dressing:
- Add the mayonnaise in a small bowl.
- Then, if the liquid in the can of Mandarin oranges is a fruit juice, add 2 tablespoons of the juice in the bowl with the mayonnaise. If the liquid isn't fruit juice, add 2 tablespoons of apple juice or milk to the mayonnaise.
- Next, add the rice vinegar and sugar to the bowl with the mayonnaise and mix together.
- Stir the dressing into the salad.
- Once the salad is coated, add the Mandarin oranges and carefully mix them into the salad making sure that they stay whole and don't break into pieces.
- Serve chilled or at room temperature.
