Beef Jerky Peanut Brittle
- 4 ounces, weight Beef Jerky
- 1 cup Dry Roasted Peanuts
- 2 cups Sugar
- 3/4 cups Water
- 7/8 cups Light Corn Syrup
- 1 teaspoon Salt
- 2 Tablespoons Butter
- 2 teaspoons Vanilla Extract
- 1 teaspoon Baking Soda
- Chop beef jerky into small (1/4" or less) pieces.
- Run peanuts through your hands so that all pieces are in halves.
- Heat the sugar and water together in a medium size stock pot with a candy thermometer attached. Stir frequently bringing the sugar and water to a boil. Add the corn syrup and cook until 235-240u0b0F.
- Add peanuts and beef jerky and stir constantly while bringing the temperature up to 310u0b0F. Remove from the heat and stir in the salt, butter and vanilla. Add baking soda last and mix well.
- Pour onto a prepared cookie sheet lined with parchment paper (do not substitute wax paper) and spread evenly. Cool completely and break into small pieces.
- Store in an airtight container in a cool location.
