Peppermint Bark Cookies
- 2 cups Unsalted Butter
- 2 cups Dark Brown Sugar
- 2/3 cups Sugar
- 2 Eggs
- 3 teaspoons Vanilla
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 3-1/2 cups Flour
- 2 cups Oats, Old Fashioned
- 1 bag (about 11 Oz. Size) Semi-Sweet Chocolate Chips
- 1 cup White Chocolate Chips
- 1-1/2 cup Andes Peppermint Crunch Baking Chips
- 1. Preheat oven to 300u0b0F.
- 2. Using an electric mixer, cream the butter, brown sugar, and granulated sugar until fluffy (about 3 minutes).
- 3. Beat in egg and vanilla extract.
- 4. Add baking soda and salt, and then flour. Mix completely.
- 5. Stir in oats, semi-sweet chips, white chocolate chips, and Andes baking chips.
- 6. Scoop into 1-tablespoon cookies and place on cookie sheet lined with parchment paper, 2 inches apart.
- 7. Bake for 20 minutes for large cookies or 12-15 minutes for small cookies. Do not overbake.
