Peppermint Bark Cookies

  1. 1. Preheat oven to 300u0b0F.
  2. 2. Using an electric mixer, cream the butter, brown sugar, and granulated sugar until fluffy (about 3 minutes).
  3. 3. Beat in egg and vanilla extract.
  4. 4. Add baking soda and salt, and then flour. Mix completely.
  5. 5. Stir in oats, semi-sweet chips, white chocolate chips, and Andes baking chips.
  6. 6. Scoop into 1-tablespoon cookies and place on cookie sheet lined with parchment paper, 2 inches apart.
  7. 7. Bake for 20 minutes for large cookies or 12-15 minutes for small cookies. Do not overbake.
