No Fuss Salad
- 2 pieces Carrots
- 2 pieces Zucchini
- 1 piece Cucumber
- 1 piece Jicama
- 1 piece Beet
- 1 Handful Of Flax And Sunflower Seeds
- 1 Handful Of Mixed Nuts
- 1 dash Olive Oil
- 1 dash Lemon Juice
- 1 Tablespoon Fresh Parsley, Chopped
- 1 Tablespoon Fresh Mint, Chopped
- Thinly slice or shred all the vegetables and keep them in separate bowls (otherwise the beets will stain the rest of the vegetables).
- If necessary, chop the nuts in smaller pieces, and put them aside.
- Prepare the dressing by mixing the olive oil with the lemon juice. Add the chopped fresh herbs. Add salt and pepper to taste.
- Serving directions: In a bowl, mix all the vegetables together. Add the nuts and the seeds. Add the dressing and mix again. Serve.
