Almost Famous Oatmeal Cookies
- 1/2 cups Butter
- 1/2 cups Shortening
- 1-1/2 cup Brown Sugar
- 2 whole Eggs
- 1-1/2 teaspoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 3 cups Rolled Oats
- 2 cups Raisins
- 1 cup Walnuts, Chopped (optional)
- Preheat oven to 350 F. Line cookie sheets with parchment.
- Cream butter, shortening and sugar together. Add eggs and vanilla. Mix together flour, salt, baking soda, and add to sugar mixture. Stir in oats, raisins and walnuts.
- Bake for 8 to 12 minutes or until just brown around the edges and the centers still look mooshy (cookies will set up upon cooling). That's a big time range there; my first batch in the oven takes 12 minutes but subsequent batches only take 8 minutes. Just be sure to watch these carefully. Overcooking them is a sin.
