Chocolate Chip Coconut Bars
- 1/2 cups Softened Butter
- 1/2 cups Vegetable Shortening
- 1 cup Sugar
- 1/2 cups Dark Brown Sugar
- 1 whole Egg
- 1/2 teaspoons Vanilla
- 2 cups Self-Rising Flour
- 1-1/2 cup Chocolate Chips (I Used Hershey's Dark Cocolate)
- 1 cup Angel Flake Coconut
- Beat the butter and shortening together with an electric mixer for about two minutes, incorporating as much air as possible. Gradually add the white sugar and beat until fluffy. Add the brown sugar and beat to combine. Add the egg and the vanilla and beat to combine.
- Add the flour and incorporate with the mixer on low, just enough to mix the flour into the sugar mixture. Gently, stir in the chocolate chips and coconut. It should be about the consistancy of cookie dough but a little gooier. Spread into a glass baking dish, 13 x 9, that has been lightly greased with shortening.
- Bake at 325u0b0F for about 15 minutes, until they just begin to turn light brown. Allow to cool in the pan and then cut into bars.
