Turkey Ham And Wild Rice Salad
- 1 1/2 lb. cubed turkey ham
- 1 (6 oz.) pkg. wild rice mix, prepared
- 2 medium avocados
- 2 Tbsp. lemon juice
- 2 fresh tomatoes
- 1/4 c. sliced green onions
- 1/3 c. red wine vinegar
- 1/2 c. olive oil
- fresh ground pepper to taste
- 2 c. finely cut fresh spinach, stems removed
- fresh spinach leaves (as needed)
- 2 Tbsp. finely chopped fresh parsley
- Combine turkey ham and cooled rice mixture in a large bowl. Peel and cube avocados and sprinkle with lemon juice.
- Remove seeds from tomatoes and dice.
- Mix avocados, tomatoes and green onion with turkey ham and rice.
- Combine vinegar, oil and pepper; pour over salad.
- Mix lightly and chill.
