Chewy Chocolate Pecan Cookies
- 1/2 cups Butter, Softened
- 1/2 cups Brown Sugar
- 1/4 cups Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1 cup Flour
- 1/4 cups Cocoa Powder
- 3/4 teaspoons Baking Soda
- 1/4 cups Chopped Pecans
- 1/4 cups Chocolate Chips
- In a large bowl beat together the butter and sugars until creamy. Add in the vanilla and mix until combined. Mix in the flour, cocoa powder and baking soda and mix until just combined, then fold in the pecans and chocolate chips. Refrigerate the dough for 30-60 minutes before baking. Preheat oven to 325 F.
- When the dough is done chilling scoop by the tablespoonful onto a baking sheet that you've lined with parchment paper or a Silpat. Bake at 325 F for 10-12 minutes. Then remove from the oven and let them cool completely before serving or else you'll have a doughy sticky mess to contend with!
