Pfeffernuesse Cookies
- 1 c. honey
- 1 c. sugar
- 1 1/2 c. brown sugar
- 3 eggs
- 1 c. lard (shortening)
- 1 c. cold coffee
- 3 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. anise seed extract
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1 tsp. black pepper
- 8 c. white flour
- 1/2 tsp. salt
- powdered sugar
- Mix all dry ingredients and set aside.
- Mix honey, sugar, eggs, lard, coffee and anise seed extract together.
- Mix well.
- Add dry ingredients.
- (This makes a soft dough; set aside for 2 to 2 1/2 hours.)
- Later make small balls about the size of walnuts.
- Place on cookie sheet.
- Bake at 350u0b0 for 10 minutes.
- When cookies come out, be ready with brown paper bag with powdered sugar.
- Shake a few cookies at a time.
- Place out to cool.
