Peter Paul Mound Cake
- 1 box Chocolate Cake Mix (about 18 Oz.)

- Filling
- 1 cup Sugar
- 1 cup Heavy Whipping Cream
- 1 teaspoon Vanilla
- 20 pieces Marshmallows
- 14 ounces, weight Coconut Flakes

- Icing
- 1 cup Brown Sugar
- 1 stick Butter
- 1/4 cups Cocoa
- 1/4 cups Heavy Whipping Cream
- 1 teaspoon Vanilla
- 1-1/2 cup Powdered Sugar
- Cake:
- Mix the cake according to box directions. Bake in two 9" round cake pans.
- Filling:
- Cook the sugar and whipping cream until blended. Remove from heat and add vanilla, marshmallows, and coconut. (I add the coconut last to insure all the marshmallows are melted.) Cut the layers of cake in half. Stack the cake halves with the filling in between each layer.
- Icing:
- Cook the brown sugar, butter, and cocoa until smooth. Add whipping cream; cooking until boiling. Remove from heat. Add vanilla and powdered sugar. (I typically add the powder sugar half a cup at a time to insure I get all the lumps out, or you could sift it beforehand if you like). You will have to beat it well to make the icing smooth.
