Mashed Party Potatoes
- 5 pounds Premium White Potatoes (I Use Yukon Gold)
- 12 ounces, weight Cream Cheese
- 3/4 cups Light Sour Cream
- 1 whole Egg
- 3/4 sticks Margarine/butter
- Salt And Paprika To Taste
- Peel potatoes and boil until they are fork tender.
- Beat cream cheese, sour cream and egg at medium speed until well blended. Melt margarine/butter and add to the mashed potatoes. Add sour cream mixture to potatoes. I use a hand mixer to get them really smooth. Beat on medium speed until light and fluffy. Salt to taste. Spoon into a 9x13 greased casserole dish. Sprinkle the top with paprika. Brown in a 350 degree F oven for 30 minutes.
- To reduce the amount to serve 8 people, use 2 1/2 pounds potatoes, 1/2 stick margarine, one 8 ounce package of cream cheese, and 1/2 cup sour cream plus the one egg.
