Pecan Glazed Bran Muffins
- FOR THE MUFFINS:
- 1 cup Wheat Flour
- 1-1/2 cup Oat Bran
- 1 cup Brown Sugar
- 1/2 teaspoons Baking Soda
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 1/4 teaspoons Cinnamon
- 1/8 teaspoons Nutmeg
- 1/8 teaspoons Cardamom
- 2 whole Eggs
- 2 Tablespoons Canola Oil
- 1 cup Milk
- FOR THE PECAN GLAZE:
- 1/2 cups Melted Butter
- 1/2 cups White Sugar
- 1/2 cups Brown Sugar
- 2 Tablespoons Molasses
- 2 Tablespoons Honey
- I love bran muffins with every fiber of my being. Even more than bran muffins, though, I love pecan glazed bran muffins. They are easy to make and a good-for-you breakfast treat that tastes like dessert.
- Preheat oven to 400 F.
- Place all of the muffin ingredients into a mixing bowl. Mix until well combined. Set aside while working on the pecan glaze topping.
- Place all of the pecan glaze ingredients into a medium bowl and give it a few stirs.
- Cover a 12-count muffin tin with cooking spray (even on the top of the pan) and then divide the pecan glaze between the 12 muffin cups.
- Give the glaze a stir in each muffin cup so that it coats the sides as much as possible. Then fill with a scoop of the bran muffin batter. Repeat with the remaining batter then put the pan into the oven. Put a baking sheet on the rack under the muffin tin to catch possible drips of glaze.
- Bake for about 15 minutes or until muffins are done. When you pull them out of the oven, carefully turn muffin tin upside down onto a clean baking sheet.
- These are cute served with a pretty paper doily underneath.
