Mint Chocolate Chip Cookies
- 1/2 cups Unsalted Butter Or Margarine, Softened
- 1/2 cups Shortening
- 3/4 cups Brown Sugar
- 3/4 cups Sugar
- 2 whole Large Eggs
- 2 teaspoons Mint Extract
- 2 cups Flour
- 1/4 cups Cocoa Powder
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1-1/2 cup Mint Chips Or Semi Sweet Chocolate Chips
- Preheat oven to 350u0b0F.
- In a large bowl cream together margarine, shortening and sugars until thoroughly combined. Beat in one egg at a time, then the mint extract.
- In a separate bowl, whisk together flour, cocoa powder, salt, and baking soda. Stir into the creamed mixture in 3 additions. Stir in chocolate chips.
- Scoop by heaping tablespoonfuls onto a cookie sheet and bake 8-10 minutes until set on the edges. Cool on the baking sheet for 2-5 minutes, then move cookies to a wire rack to cool completely.
