Mint Chocolate Chip Cookies

  1. Preheat oven to 350u0b0F.
  2. In a large bowl cream together margarine, shortening and sugars until thoroughly combined. Beat in one egg at a time, then the mint extract.
  3. In a separate bowl, whisk together flour, cocoa powder, salt, and baking soda. Stir into the creamed mixture in 3 additions. Stir in chocolate chips.
  4. Scoop by heaping tablespoonfuls onto a cookie sheet and bake 8-10 minutes until set on the edges. Cool on the baking sheet for 2-5 minutes, then move cookies to a wire rack to cool completely.
