Dulce De Leche Muffins

  1. For the muffins, in a bowl combine flour and baking powder. Melt butter; beat in the egg, vanilla extract and dulce de leche cream. Stir well.
  2. Pour wet ingredients into the dry, stirring well. Add the canola oil and milk. This will make your muffins super moist!
  3. Place paper liners into 6 muffin cups. Pour about 1 tablespoon of batter in each muffin cup. Add 1 teaspoon of dulce de leche (for the filling) in the center, then cover with an other tablespoon of batter.
  4. Decorate with coconut flakes and half a caramelized pecan. Bake at 180u0b0C for about 20-25 minutes.
  5. Let cool. Enjoy.
