Homemade Bagels
- 2 cups Warm Water
- 3 teaspoons Instant Yeast
- 3-1/2 cups All-purpose Flour
- 1/2 cups Chestnut Flour
- 1/2 cups Barley Flour
- 1/4 cups Vital Wheat Gluten
- 2 teaspoons Salt
- Combine all of the ingredients in the bowl of a stand mixer fitted with a bread hook. Knead the dough on medium speed (4 on a KitchenAid mixer) for 10 minutes, or until the dough is very smooth and elastic.
- Let the dough rise until doubled in size, about an hour and a half.
- Preheat the oven to 525 F.
- Divide the dough into six equal pieces and round them into balls. Place your middle and index finger in the middle of the ball and spin just to create a hole. Hand-stretch the dough so the hole is about an inch or two wide. Place the bagels on a baking sheet that you've covered with parchment paper and bake for 10 minutes, or until golden. Enjoy!
