Homemade Bagels

  1. Combine all of the ingredients in the bowl of a stand mixer fitted with a bread hook. Knead the dough on medium speed (4 on a KitchenAid mixer) for 10 minutes, or until the dough is very smooth and elastic.
  2. Let the dough rise until doubled in size, about an hour and a half.
  3. Preheat the oven to 525 F.
  4. Divide the dough into six equal pieces and round them into balls. Place your middle and index finger in the middle of the ball and spin just to create a hole. Hand-stretch the dough so the hole is about an inch or two wide. Place the bagels on a baking sheet that you've covered with parchment paper and bake for 10 minutes, or until golden. Enjoy!
