Herbed Tomato Chicken
- 2 medium onions, sliced
- 2 cloves garlic, minced
- 3 whole medium chicken breasts, skinned and halved lengthwise
- 1 (7 1/2 oz.) can tomatoes, cut up
- 1/2 c. tomato sauce
- 1 (2 1/2 oz.) jar sliced mushrooms, drained
- 1/4 c. chopped green pepper
- 1 tsp. dried basil, crushed
- 1 tsp. salt
- 1 bay leaf
- 1/4 c. dry white wine
- In skillet, combine onions, garlic and 1/2 cup water.
- Bring to boiling.
- Cover and simmer 10 minutes or until onion is tender. Drain.
- Add chicken to skillet.
- Combine undrained tomatoes, tomato sauce, mushrooms, green pepper, basil, salt, bay leaf and dash of pepper.
- Pour over chicken, cover and simmer for 30 minutes.
- Stir in wine and cook, uncovered, for 15 minutes more.
- Remove bay leaf. Skim excess fat from juices.
- Transfer chicken and sauce to serving platter.
- Makes 6 servings.
