Oatmeal Blueberry Waffles

  1. For the waffles:
  2. Combine all the ingredients in a medium bowl and whisk together. Set aside. Heat waffle iron to medium-high and grease with cooking spray. Pour batter onto waffle iron and cook until done.
  3. Blueberry Fruit Sauce:
  4. Combine all ingredients in a small saucepan over medium heat. Stir and cook until blueberries break down and sauce reduces and thickens.
  5. Notes:
  6. Use any sweetener you like in place of agave. 1 tablespoon does not make a very sweet waffle so increase amounts as desired.
  7. For a thicker fruit sauce, add 1 tablespoon of cornstarch while sauce cooks.
