Pink Grapefruit Muffins
- FOR THE MUFFINS:
- 1/2 cups Butter
- 1/2 cups Granulated Sugar
- 1 whole Egg
- 1/4 cups Milk
- 1 teaspoon Vanilla
- 1 cup All-purpose Flour
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 1 Tablespoon Fresh Grapefruit Zest
- FOR THE GLAZE:
- 1/2 cups Icing Sugar
- 1 Tablespoon Fresh Grapefruit Zest
- 2 Tablespoons Fresh Grapefruit Juice
- For the muffins:
- Preheat your oven to 350u0b0F. Line a muffin tin with paper liners.
- In the bowl of a stand mixer, cream the butter and sugar together until pale and creamy. Add the egg and mix well. Add the milk and vanilla and mix to combine.
- In another bowl, combine the flour, baking powder, salt and grapefruit zest. Add the dry ingredients to the wet and mix until just combined.
- Spoon the batter into the prepared pan.
- Bake for 14-16 minutes or until they are lightly browned and a toothpick comes out clean. Cool completely on a wire rack.
- Once they are cooled you can put on the glaze.
- For the glaze:
- Mix the icing sugar, grapefruit zest and grapefruit juice until completely combined. Pour over each muffin and let it set.
