Judy'S 1000 Island Relish
- 8 large cucumbers
- 1 large head cauliflower
- 2 large onions
- 2 sweet green peppers
- 1 sweet red pepper
- 1/2 c. salt
- 1 Tbsp. mustard seed
- 1 Tbsp. celery seed
- 6 Tbsp. dry mustard
- 1 Tbsp. turmeric
- 6 c. sugar
- 3/4 c. flour
- 2 2/3 c. water
- 5 c. vinegar
- Chop cucumbers and cauliflower, peel and chop onions, and seed and chop sweet peppers.
- Mix salt and vegetables and let stand for one hour.
- Drain liquid.
- Mix spices, sugar, and flour in large kettle.
- Moisten with water, add vinegar and drained vegetables.
- Cook 20-30 minutes.
- Pack in hot jars.
- Seal at once. Process in boiling water bath for 5 minutes.
- Makes 10 pints.
