Judy'S 1000 Island Relish

  1. Chop cucumbers and cauliflower, peel and chop onions, and seed and chop sweet peppers.
  2. Mix salt and vegetables and let stand for one hour.
  3. Drain liquid.
  4. Mix spices, sugar, and flour in large kettle.
  5. Moisten with water, add vinegar and drained vegetables.
  6. Cook 20-30 minutes.
  7. Pack in hot jars.
  8. Seal at once. Process in boiling water bath for 5 minutes.
  9. Makes 10 pints.
