Pink Marble Cake
- 1/2 pounds, 2-5/8 ounces, weight Butter, Softened
- 1/2 pounds, 1-5/8 ounces, weight Sugar
- 1 Tablespoon Vanilla Extract
- 2 Tablespoons Rum
- 1/2 teaspoons Salt
- 5 whole Eggs
- 3/4 pounds, 3/8 ounces, weight All-purpose Flour
- 2 Tablespoons Baking Powder
- 5 Tablespoons Milk
- 2 drops Red Food Coloring, More Or Less Based On Your Preference
- 1/4 cups Confectioners Sugar, More Or Less To Taste, For Optional Garnish
- With a hand mixer beat the soft butter until smooth, then slowly add sugar, vanilla extract, rum and salt. Mix until everything is combined. Now add one egg at a time and mix in between each addition.
- Once all of the eggs have been added, slowly blend in the flour and baking powder. Add the milk one tablespoon at a time. If needed, you can add more than the 5 Tablespoons of milk. The dough should be thick and viscous.
- Now separate the batter into two halves and add red food coloring to one half.
- Pour both batters into a cake pan of your choice and slightly stir in a circular motion to create the marble effect.
- Bake for about 60 minutes at 375u0b0F, until a toothpick comes out clean. You might want to cover the top with some aluminum foil after 40 minutes of baking to prevent the top of the cake from getting too dark.
- There is no frosting needed. Just dust it with some confectioner's sugar when completely cooled.
