Granola Pecan Pancakes

  1. In a mixing bowl, combine eggs, milk, oil and sugar. Mix in vanilla, salt and baking powder. Mix in flour until smooth. Stir in granola and pecans.
  2. Heat a skillet or griddle over medium heat, spray with oil or cooking spray. Pour batter by 1/4 cup and cook until pancake batter is dry around the edges, and bubbling on top, about two minutes, turn over and cook the other side, about 2 more minutes. Keep the completed pancakes warm, and repeat with remaining batter.
  3. Serve with butter, syrup, or any other favorite topping.
  4. Enjoy!
