Granola Pecan Pancakes
- 2 whole Eggs
- 2-1/4 cups Milk
- 1/4 cups Vegetable Oil
- 2 Tablespoons Sugar
- 1 teaspoon Vanilla
- 1 teaspoon Salt
- 2 Tablespoons Baking Powder
- 2 cups All-purpose Flour
- 1/2 cups Granola
- 1/4 cups Chopped Pecans
- In a mixing bowl, combine eggs, milk, oil and sugar. Mix in vanilla, salt and baking powder. Mix in flour until smooth. Stir in granola and pecans.
- Heat a skillet or griddle over medium heat, spray with oil or cooking spray. Pour batter by 1/4 cup and cook until pancake batter is dry around the edges, and bubbling on top, about two minutes, turn over and cook the other side, about 2 more minutes. Keep the completed pancakes warm, and repeat with remaining batter.
- Serve with butter, syrup, or any other favorite topping.
