Apricot And Mango Breakfast Bars
- 2 cups Oatmeal
- 1/2 cups White Flour
- 1/2 cups Whole Wheat Flour
- 3/4 cups Firmly Packed Brown Sugar
- 1/2 teaspoons Cinnamon
- 3/4 cups Melted Butter
- 1 cup Dried Apricots, Chopped
- 1 whole Egg
- 1/4 cups Milk
- 1 cup Mango, Diced
- 1/2 cups Pecans Or Walnuts, Toasted And Chopped (optional)
- Mix together the first 6 ingredients (oatmeal, both flours, brown sugar, cinnamon and melted butter). Remove 1 firmly packed cup of mixture and put into another bowl. Press the remaining mixture into the bottom of a well greased 9" square pan.
- To the reserved mixture add the remaining ingredients and mix well. Spread on top of the mixture in the pan.
- Bake at 350 degrees F (180C) for 35-40 minutes . Cut into squares while still warm.
