Lavender & Lemon Cookies
- 1 Tablespoon Lemon Zest
- 3 Tablespoons Fresh Squeezed Lemon Juice
- 1 teaspoon Dried Lavender
- 1 cup Sugar
- 1/2 cups Softened Butter
- 1 teaspoon Vanilla Extract
- 1 Egg
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Baking Powder
- 1-1/2 cup White Flour
- 1/4 cups Powdered Sugar
- Zest and juice lemon into a small bowl, add the lavender and let sit for 4 hours in the fridge. This will awaken the buds, giving off that delightful taste.
- Preheat oven to 350u0b0F.
- In a mixer, cream together sugar and butter. Mix in the vanilla, egg, and lemon mixture. Stir in dry ingredients, except for the powdered sugar, until combined. Roll dough into a balls and place on a cookie sheet.
- Bake for 10 minutes or until edges start to barely brown. Remove from oven and let cool on cookie sheet for 2-3 minutes, then move to a cooling rack. Using a mesh strainer dust cookies with powdered sugar.
