Linguini With Clam Sauce
- 4 (6 1/2 oz.) cans chopped clams
- 2 Tbsp. olive oil
- 2 Tbsp. margarine
- 2 cloves garlic, chopped fine
- 2 Tbsp. flour
- 1/4 c. chopped parsley
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 tsp. dry lemon peel or 1 tsp. fresh grated lemon
- 1/2 lb. linguini, cooked according to pkg.
- grated Pecorino-Romano cheese or Parmesan cheese
- Drain broth from clams.
- Set aside.
- In a saucepan, heat oil and margarine.
- Add garlic.
- Saute 1 minute.
- Sprinkle in flour and cook, stirring constantly 1 minute.
- Add clam broth, parsley, salt, pepper and lemon peel.
- Simmer 10 minutes.
- Add clams and heat.
- Toss with hot cooked linguini.
- Serve with cheese, if desired.
- Serves 2 large portions or 4 small side dishes.
