Sicilian Meat Roll
- 2 lb. ground beef
- 1/2 c. tomato sauce (small can)
- 2 beaten eggs
- 2 slices wet bread
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 6 oz. Mozzarella cheese
- 5 oz. ham (boars head)
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 1 clove garlic
- Combine all ingredients.
- On foil, pat meat to a 10 x 18-inch rectangle.
- Arrange ham slices atop meat, leaving room on the edges.
- Reserve 2 slices of cheese.
- Tear up remaining cheese; place over ham.
- Starting from short end, carefully roll up meat, using foil to lift and seal edges and ends.
- Place roll, seam side down, in a 13 x 9 x 2-inch pan.
- Bake at 350u0b0 for about 1 1/4 hours.
- (Center will be pink due to ham.)
- Slice cheese; melt approximately 2 minutes.
