Apple-Cinnamon Banana Bread
- 1-1/2 cup All-purpose Flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 2 teaspoons Ground Cinnamon
- 1/2 teaspoons Ground Cloves
- 1 whole Large Apple, Diced
- 1 whole Ripe Banana, Mashed
- 1 cup Plain Yogurt
- 2 Tablespoons Vegetable Oil
- 1/2 cups Sugar
- 1 whole Egg
- 1 teaspoon Vanilla Extract
- Preheat oven to 350 degrees F and grease a 9"x5" loaf pan.
- In a medium mixing bowl, mix together first five ingredients (dry ingredients).
- In a large bowl, stir together remaining ingredients until well blended. Slowly mix dry ingredients into wet ingredients, stirring until just combined. Do not overmix!
- Pour batter (it will be very thick, but should be evenly moist like thick brownie batter - not doughy like bread dough) into prepared pan and place onto middle rack of preheated oven. Bake approximately 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then carefully invert loaf onto a wire rack (run a knife around between the pan and the bread to loosen). Cool completely before slicing.
- Cooled loaf can be tightly wrapped in plastic and foil and frozen for a couple of months.
