Apple-Cinnamon Banana Bread

  1. Preheat oven to 350 degrees F and grease a 9"x5" loaf pan.
  2. In a medium mixing bowl, mix together first five ingredients (dry ingredients).
  3. In a large bowl, stir together remaining ingredients until well blended. Slowly mix dry ingredients into wet ingredients, stirring until just combined. Do not overmix!
  4. Pour batter (it will be very thick, but should be evenly moist like thick brownie batter - not doughy like bread dough) into prepared pan and place onto middle rack of preheated oven. Bake approximately 40-50 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool in pan for 10 minutes, then carefully invert loaf onto a wire rack (run a knife around between the pan and the bread to loosen). Cool completely before slicing.
  6. Cooled loaf can be tightly wrapped in plastic and foil and frozen for a couple of months.
