Peanut Butter Blueberry Chocolate Chip Cookies
- 1 cup White Whole Wheat Pastry Flour
- 1-1/2 teaspoon Baking Soda
- 1 cup Peanut Putter
- 1/2 cups Cookie Butter (of Peanut Butter If Prefer)
- 1/4 cups Sugar
- 3/4 cups Packed Brown Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1 cup Chocolate Chips
- 1-1/4 cup Fresh Blueberries
- Preheat oven to 350u0b0F.
- In a small bowl combine flour and baking soda. Mix.
- In a large stand mixer, cream peanut butter, cookie butter, sugar, and brown sugar until smooth, about 2 minutes. Add in eggs one at a time. Add in vanilla and combine well.
- Mix in dry ingredients to peanut butter mixture on slow speed and combine well. Add in chocolate chips and blueberries and stir gently to combine. Be very careful not to overmix the blueberries or they will burst.
- Drop by tablespoonfuls onto Silpat-lined cookie sheet. Bake 10-13 minutes. Check at 9 minutes. Do not let cookies over-brown. They will look slightly underdone.
